but I promise it tastes delicious.
and it's really easy to make.
even a 4 yr old and a 1 yr old can do it.
and I promise yours will look better if you don't have a 4 yr old and a 1 yr old make it
but if you do it will still taste yummy...even if it ends up looking like this.
Hummingbird cake
3 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 cups sugar
1 tsp ground cinnamon
3 large eggs, beaten
1 cup vegetable oil
1 1/2 tsp vanilla
1 8 oz can crushed pineapple, juice and all
1 cups chopped pecans (optional)
2 ripe bananas mashed or chopped
Combine first 5 ingredients in a large bowl; add eggs and oil, stirring until moistened.
Stir in vanilla, pineapple, pecans and bananas.
Pour batter into 2 greased and floured 9 inch round cake pans.
Bake at 350 degrees for about 30 min. (Check the middle...when the knife comes out clean it's done.)
Frost and devour!
Cream Cheese Frosting
11 oz cream cheese, softened (about 1 1/2 packages)
3/4 cup butter, softened
1-16oz package powdered sugar
1 1/2 tsp vanilla
1/2 cup chopped pecans (Optional)
Beat first 3 ingredients at medium speed with an electric mixer until smooth.
Gradually add powdered sugar, beating at low speed until light and fluffy.
Stir in Vanilla
After frosting, sprinkle with the pecans
If you don't feel like cake, try banana bread!
I omit the pineapple and add enough coffee creamer to make it moist instead.
Pour into 2 breadpans and cook 25-30 min until done in the middle.
The creamer gives it a nice crispy crust...so yummy!
